Another sandwich picture?



"Why does this food blogger have to post a picture of his sandwich?" I know a sandwich is a sandwich but Manwich...I had to write that. This is not a post about Manwich. I don't like the Manwich product. I must brag some more on my oldest daughter's Jalapeno Cheddar sourdough bread. 



This sandwich is made with her homemade bread, purple onion, tomato, lettuce, pickle loaf meat from the deli, and mayonnaise. I think there's pepper sprinkled on the sandwich too. Man, what a sandwich! It's not a Manwich! I hope you are not a Manwich fan. If you are a Manwich fan, I offer my sincerest apologies.



A sandwich is a recipe. There are great sandwich recipes to share. As I sip my Earl Grey tea and type this post I am thinking of the simple peanut butter and jelly sandwich. As a child, I always simply had peanut butter and jelly on bread. Then one day someone made a peanut butter and jelly sandwich for me and it had a thin layer of butter on the bread with the peanut butter. It blew my mind! I had never had butter on my peanut butter and jelly sandwich. Adding a layer of butter expanded my world of peanut butter sandwiches.



Ok, here's where I get all philosophical on you. Let me ask a question here. What if something simple in your life is added to a situation that seems normal and has the potential to make it better. Maybe it's a thought or idea. I am writing to get you thinking.

My Thoughts On Cashew Chicken Perfection:



If you are looking for a great Cashew Chicken recipe to try, you will like this one. It is very traditional and tastes great. There is oyster sauce in this recipe and I think it gives that special distinct flavor that is in cashew chicken. The flavor of fresh cashews blends well on the tastebuds.



I have a memory of my mother always being a big fan of cashew chicken. I know today she still loves cashew chicken. My personal favorite is General Chicken. I think it is the spicy taste I like best. I can't forget to mention that cooking your chicken in peanut oil also gives it that special taste.



Cashew Chicken Perfection Recipe - (Asian Food)



Ingredients:



  • 4 whole chicken breasts (3 pounds estimate)
  • 4 eggs
  • 1 cup milk
  • Salt and pepper (to taste)
  • Flour (all-purpose)
  • Peanut oil
  • 2 chicken bouillon cubes
  • 1 1/2 cup cold water
  • 2 tablespoons cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon oyster sauce (or more if you like)
  • 1 package cashews ( about 2 ounces)
  • 1 bunch of scallions (chopped)



Instructions:



Skin and bone the chicken; cut into bite-size pieces. Mix eggs, milk, salt, and pepper:  pour over the chicken and let the chicken stand for 10 minutes. Remove the chicken and dredge it in flour. Let it stand for 15 minutes. Pour the peanut oil 1 inch deep into a large skillet. Heat the oil to 375 degrees. Fry the chicken a few pieces at a time. Remove the chicken to the platter, and keep it warm.



Dissolve the bouillon cubes in boiling water. Combine cold water and cornstarch, and slowly stir into hot bouillon. Add the sugar, oyster sauce, and additional salt and pepper to taste. Cook over low heat, stirring constantly, until the mixture thickens. Remove from the heat; stir in cashews, and let stand for 10 minutes. Pour the sauce over the chicken, and sprinkle with chopped scallions.

I hope you had a great Independence Day! I had a great day. We didn't have any fireworks but it was easy to enjoy the fireworks that other people were shooting off in the area. Our kids are grown and aren't that interested in fireworks and the little grandbabies are too little at this time to feel safe and enjoy fireworks.



It is a blurry picture I shared of our meal and I apologize for that. I will describe it to you. It is a tradition in our household to cook barbecue bologna on the grill once a year. I usually have it sliced at the deli 1-inch thick. We use cole slaw as a topping on the barbecue bologna sandwich. We had beef hotdogs too. For the sides, potato salad, barbecue baked beans, and barbecue potato chips. It was a great family time and good food. The grandbabies colored with crayons on paper and decorated their creations with stickers.

My Thoughts On Cherry Pineapple Dump Cake:



My grandmother would make dump cakes in the past. She always enjoyed sharing her cakes and recipes. She would always mention how easy it was to make. Dump cakes and cobblers can always be a hit at any gathering and they were always present at my family reunions. This cherry pineapple dump cake recipe is a favorite because I love the tangy sweetness of cherry and pineapple. If you are looking for something sweet and quick, this is it!



Cherry Pineapple Dump Cake Easy Recipe - (Desserts)



Ingredients:



  • 1 can cherry pie filling
  • 1 can crushed pineapple
  • 1/2 to 3/4 box white or yellow cake mix
  • 1 stick butter or margarine (1/4 pound)
  • Pecan halves



Instructions:



Combine the cherry pie filling and crushed pineapple in the bottom of a 13x9x2-inch baking pan. Sprinkle the cake mix over the pie fillings. Slice the butter or margarine very thin over the top of the cake mix. Place the pan in a 375-degree oven and wait until the butter or margarine is melted. Remove the pan from the oven and place the pecan halves in rows on top of the cake. Return the pan to the oven and bake until juice cooks through the batter, and the top is golden brown. Remove the pan from the oven; cool and serve.

Fruit Pizza Secret Recipe

Fruit Pizza Secret Recipe - (Pies & Pastries)


Ingredients:

  • 1 package cream cheese ( 8 ounces, softened)
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • Fresh fruits include bananas, blueberries, raspberries, kiwi, grapes, strawberries, peaches, and pineapple.

Directions:

Prepare the Crust and Glaze. Combine the cream cheese, sugar, and vanilla. Cream the mixture until it is smooth. Spread it over the cooled crust. Slice your fruits. Starting at the outside of the crust, arrange the fruit into rings using one fruit for each ring. Spoon the cooled glaze over the fruit, covering it completely. Chill it in the refrigerator. Cut the Fruit Pizza into wedges before serving.

Crust:


Ingredients:

  • 3/4 cup butter or margarine (melted)
  • 3 tablespoons powdered sugar
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons pecan pieces

Directions:

Combine the melted butter, sugar, and flour, mixing well. Stir in the nuts. Pat the dough into a 12-inch pizza pan. Bake at 350 degrees for 10-15 minutes or until golden brown. Remove from the oven and cool.

Glaze:


Ingredients:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1/2 cup orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon orange rind (grated)
  • 1 tablespoon Grand Marnier liqueur

Directions:

Combine all the ingredients in a small saucepan. Cook over low heat, stirring constantly, until the mixture reaches boiling point and thickens. Let cool.

Employee appreciation.

My employer showed appreciation for all the employees by serving us burgers, brots, and delicious sides. I am always grateful when this happens. The food was very good. The burgers had a great fresh beef flavor. I had tomato, lettuce, cheese, and mayonnaise on my burger. You can see in the picture what I had on my brot. I am a huge mustard fan. Peach-A-Berry Cobbler Recipe

Peach-A-Berry Cobbler Recipe - (Desserts)

Filling

Ingredients:

  • 1 tablespoon cornstarch
  • 1/4 cup brown sugar
  • 1/2 cup cold water
  • 2 cups sweetened peaches (sliced; frozen or fresh)
  • 1 cup blueberries (optional)
  • 1 tablespoon butter
  • 1 tablespoon lemon juice

Directions:

Mix cornstarch, brown sugar, and cold water. Add the fruit. Cook and stir until the mixture thickens. Add butter and lemon juice. Pour into a 9x9-inch pan.

Topping

Ingredients:

  • 1 cup all-purpose flour (sifted)
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter (salt)

Directions:

Sift dry ingredients together. Add milk and butter. Beat until smooth. Pour over the fruit mixture. Sprinkle 2 tablespoons sugar and 1/4 teaspoon nutmeg over batter. Bake at 350 degrees for 30 minutes.

My youngest daughter has a Beagle and we love her very much. She is such a good dog. We noticed she has not been acting well lately. She wants to go outside to go to the bathroom a lot. I thought she might have a bladder issue so I ordered some cranberry cleanse medicine for dogs. I hope this will help her. I ordered it last night and it should be delivered tomorrow. Oriental Skillet Supper Recipe

Oriental Skillet Supper Recipe - (Asian Food)

Ingredients:

  • 1/2 cup green bell pepper (cut into strips)
  • 1/3 cup celery (cut into slices)
  • 1 tablespoon olive oil
  • 1/2 pound minute steak or stew meat (cut into 1/4 inch cubes)
  • 1/3 cup cold water
  • 1 tablespoon soy sauce
  • 2 teaspoons corn starch
  • 1/4 teaspoons salt
  • 1 medium tomato (cut into wedges)
  • 1 cup cooked rice (hot)

Directions:

In a hot skillet cook quickly the green pepper and celery in oil until tender. Remove vegetables and add meat to hot skillet. Brown quickly. Combine the cold water, soy sauce, cornstarch, and salt, and add to the skillet. Cook and stir until the mixture thickens. Add the green pepper, celery, tomato, and heat thoroughly. Serve over hot rice.

Excellent pulled pork!

I love barbecue! One of my favorite places to get barbecue is at a local food truck. The food they make is so good and they have good prices. The barbecue is honestly some of the best I have ever tasted. I have written about this business in the past. This food truck serves the Webster County area and the locals are happy about it. The city does not have a barbecue restaurant so KETTLE & QUE fills a demand for great tasting food.

You can Follow or Like KETTLE & QUE's Facebook page so you will never miss a notification when they are open and their location. They are actually a food trailer but I don't know the technical term for it. Any ideas?

I stopped by the food truck this weekend and bought a pulled pork sandwich. My youngest daughter drove me because she likes driving and I had to pick up some things at the Big Box store. She had a turkey sandwich and said it was the best turkey she ever had. That is a big compliment because I can cook a tasty turkey. I picked up a pulled pork sandwich for my wife too. She loved it!

When I cook barbecue I like to cook it in the Instapot and add barbecue sauce when it's dished out. The Instapot makes the process quicker for me.

Orange Balls Recipe - Cool Tangy & Sweet - (Cool Treats)

Ingredients:

1 can frozen orange juice (12 ounces, thawed)
1 box vanilla wafers (1 pound, crushed)
1 cup powdered sugar (2 cups if not sweet enough for you)
1 stick of butter (melted)
1 cup of nuts (chopped)
Coconut Flakes

Directions:

Combine all of the ingredients in a large bowl. When thoroughly mixed make into balls the size of walnuts. Roll the balls into the coconut flakes. Store in the refrigerator to cool.

Today I am sharing another food meme that is funny and also might make you raise an eyebrow. My big question after a little observation is, what is Goo Gone doing in the refrigerator? Strawberry Jam Cake Recipe

Strawberry Jam Cake Recipe - (Cakes)

Ingredients:

  • 1 cup sugar
  • 3/4 cup butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 cup strawberry jam

Directions:

Cream the sugar and butter. Add the eggs. Mix it well. Mix in the buttermilk and baking soda. Sift the flour and add alternately with the buttermilk. Add the jam and stir just enough to mix it well. Pour in an oblong pan and bake in a 350° oven until the cake turns loose from the sides. Test the cake with a toothpick.

I love barbecue pulled pork!

This weekend I am excited to visit a local food truck. The food truck serves the best barbecue I have tasted. I worked with a young friend whose father is the same age as me and has worked in the construction business for most of his life. He is in his middle age now and has always had the dream of owning his own food truck. He loves to cook and enjoys cooking barbecue food.

Some time back he began building his food trailer. It looks great and has a back porch with a barbecue smoker to cook the meats.

My friend told me his father had some issues getting his food trailer approved by the local health department. Apparently, the local food is very strict. Long story short, the food trailer is up to code and my friend's dad is serving the public. I am looking forward to visiting this local food trailer and enjoying a barbecue pulled pork sandwich.

Apple Bread Pudding Recipe - (Desserts)

Ingredients:

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg (beaten)
  • 1/2 cup nuts (chopped)
  • 1/2 cup raisins
  • 2 cups apples (diced)

Directions:

Cream sugar and shortening. Add flour which has been sifted with baking soda. Add salt, cinnamon, beaten egg and mix well. Then, add nuts, raisins, apples, cinnamon, and beaten egg, and mix well. Then add to the baking pan. Bake at 350 degrees for 35 to 40 minutes.

Thoughts On Apple Bread Pudding:

This dessert can be topped with your favorite ice cream. It is best fresh out of the oven. I like to sprinkle a little cinnamon on top of the ice cream. If you are a coffee drinker like me, a hot cup of coffee goes well with this Apple Bread Pudding. When I was a teenager I worked at a local family restaurant. It was my first job. The restaurant had a weekly buffet on Sundays. They served bread pudding. It was the first time I tried bread pudding. The owners allowed us to charge any food we ate and they would deduct it from our paycheck at the end of the week. I always had something to eat there and bread pudding was delicious. It was deducted from my paycheck.

My Thoughts For Today:

My mother's father.

This is my grandfather. He is my mother's father. He is holding his first great-great-granddaughter. This picture was taken several years ago. Today he is 94 years old. I have many memories of my grandfather. He served in the United States Navy and was in the Korean War. He served on a ship they nicknamed the "Tin Can" and shared many memories with me of his time there. I believe he said the ship was a "Destroyer" ship and is now a retired ship. The ship was named U.S.S. Potter. I love hearing about his time serving in the Navy.

My grandfather likes to make banana bread. I haven't had his banana bread in some time but I always enjoy it. You can see the tattoos on his arm in the picture. It was very taboo in his time for people to have tattoos but it was a common thing to have in the Navy as a memento. He has a Hula girl tattooed on his arm and when I was a child he would show it to me. He would flex his arm muscles and make the Hula girl dance. It always made me laugh.
