Pumpkin Bread Easy Recipe

 


Pumpkin Bread Easy Recipe - (Breads, Rolls)

Ingredients:

3 cups sugar
1 cup salad oil
4 eggs
1 1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2/3 cup water
2 cups pumpkin
3 1/2 cup flour
3 teaspoons baking soda
1 cup chopped pecans (optional)

Directions:

Combine ingredients with an electric mixer. Divide batter into 3 greased bread pans. Bake at 350 degrees for 1 hour until done. (Freezes well too.)

Thoughts On Pumpkin Bread:

At the time of this recipe blog post, we are coming to the close of the summer months. It is still warm during the day here in Missouri, but it is nice and cool at night. This pumpkin bread will almost make you think of banana bread when you bite into it, but it has a really nice pumpkin flavor. If you have never had pumpkin bread, you are in for a treat with this recipe. You might never think of pumpkins the same way again after trying it. During the fall time, I always try to get at least one pumpkin for decorating but this recipe makes me want to use it for cooking again. I also like saving the seeds for roasting in the oven. You can add any season you like for that and I may share a recipe I like later on.

My Thoughts:


I wanted to share a picture of a KitchenAid stand mixer my daughter is wanting to purchase. If you have been reading my posts you will know that she is quite the baker. She mostly focuses on cookies and browning and sells them at the local farmer's market. I haven't been able to get her to several of the last markets because I have had to work on Fridays. The market hours are from 2:30pm to 6:30pm on Fridays. I work a sencon shift job and we start at 3:15pm so when I work that makes it impossible for me to help my daughter get to market. She has been saving her money for a mixer but she is not met her goal yet. She loves the yellow mixer. I think that one is the best too.

I just wanted to say thank you for reading my recipe blog post and to let you know that it helps. Sour Cream Chicken Enchiladas Easy Recipe

 


Sour Cream Chicken Enchiladas Easy Recipe - (Mexican Food)

Ingredients:

1 dozen flour tortillas
2 cups shredded Cheddar cheese
3/4 cup chopped onion
1/4 cup margarine
1/4 cup flour
2 cups chicken broth
1 cup sour cream
1 (4 oz.) can chopped mild green chilies
2 cups cooked, chopped chicken

Directions:

Combine cheese, onion, and chicken in a bowl. Mix well. Place several tablespoons of mixture down the center of each tortilla and roll up. Place seam side down in a greased 13x9 inch pan.

In a saucepan, melt margarine, and blend in the flour. Add broth and cook until bubbly. Stir in sour cream and chilies. Heat through and pour over tortillas. Bake at 375 degrees for 30 minutes and pour over tortillas. Bake at 375 degrees for 30 minutes. Sprinkle extra cheese over the top and melt it as desired.

Thoughts On Sour Cream Enchiladas:

When I visit a tremendous Mexican restaurant I love to order chicken enchiladas. Well, the first thing I order from the waiter or waitress is corn chips and salsa. A nice drink goes well with the chips of course. Then after I have devoured the chips and drinks I like to order chicken enchiladas. There is something about the Mexican restaurant atmosphere that always gets me. They usually have some sort of Mexican music playing. Have you noticed that many Mexican restaurants have very decorative furniture? I just love the carved wooden chairs painted and finished to a shine.

Extra Information:

Enchiladas have an interesting history. Supposedly, they originated from the Mayan culture. Since corn was a regular food source for the Mayans they created tortillas to eat. The natural progression for the food would be chicken enchiladas. Over time the great-tasting dish made its way into Western food culture. My Thoughts:

I've been off work for the past five days and it has been the fastest five days off I've had in a while. Each day it seemed I had something I needed to accomplish. I go back to work Tuesday afternoon because I work nights right now and it was Labor Day weekend. I'll get back to how my Labor Day went but first I'll share an update on my daughter's cell phone.

I got her a new phone and all her personal information was erased from the old phone and put on her new phone. Most importantly, she has all her baking recipes on her phone now and can continue baking her cookies for the farmer's market. She is very excited about that. She did mention to me that now she realizes how important personal information is to her on her cellphone. She talked about how valuable smartphones are and it made me proud to hear her talk that way. Obviously, I am having her pay for her phone. It would be easy just to forget about it since my phone provider is letting me finance her a used phone but in the long run, it will help teach her more responsibility.

I did manage to sell a TV on Facebook Marketplace over the five days off. I delivered it to the person who purchased it and I helped set up the brand new Roku that came with the TV. My youngest daughter went with me to help deliver the TV. It was a 42-inch plasma-screen television. It is very heavy too. It was a good thing it had carry handles on the TV. I had another person on Facebook Marketplace show interest in a trumpet I have for sale. They agreed to buy the trumpet and we planned on meeting up. On the day we were supposed to meet up, they changed their mind and decided not to purchase the trumpet. It is very disappointing when that happens but that is part of selling things online and meeting with them in public.

I helped my daughter move some things to her apartment at her mom's place and finished up the weekend at my mom's house on Labor Day. She cooked us pork steaks, brats, deviled eggs, macaroni and cheese, baked Brussels sprouts, and chicken noodles. We also had apple pie and a cake she made. My daughter baked her famous chocolate chip cookies. It was a good time with family and good food for sure.

As a final thought, I am thinking of installing a wood pellet heat stove in my house. I heat with propane but would like to supplement with wood heat. I don't want to worry about a regular wood stove and buying precut wood from individuals. I think wood pellets would be easier and help with the propane bill. Last year propane cost almost $4 a pound. I will share more about this heating project and the general cost in the future.

Impossible Cheeseburger Pie Easy Recipe


Impossible Cheeseburger Pie Easy Recipe - (Beef)

Ingredients:

1 pound extra lean ground beef
1 cup chopped onion
1/2 teaspoon salt
1 cup shredded fat-free Cheddar cheese
1/2 cup Bisquick reduced fat baking mix
1 cup skim milk
2 eggs

Directions:

Heat oven to 400 degrees. Grease 9-inch pie plate. Cook ground beef and onion until the meat is brown. Stir in salt. Spread on a pie plate, and sprinkle with cheese. Stir the remaining ingredients with a fork until blended. Pour into pie plate. Bake for 25 minutes or until the knife inserted in the center comes clean.

Serves: 6 people

My Thoughts: (WARNING: This may sound like a gripe session but I am staying positive. Maybe you can relate to some of this.)


It has been a crazy week, and I need a slice of Impossible Cheeseburger Pie. My youngest daughter was not home Friday to meet the UPS guy who delivered her phone so it went back to the delivery center and will most likely be delivered Monday. Someone has to sign for the delivery. I was hoping she got her phone Friday because if you read my last post, I was worried someone would find my daughter's phone and keep it for their own use. That is exactly what happened. You would think people could be decent and return a very expensive technology device to the local phone store but nope. How disappointing. I know it is hard times for many people but I am of the opinion that people should live by the "Golden Rule" as much as possible.

I found out that someone found the phone because of the Find My app on my phone. I looked for my daughter's phone location and it did not show the location but a new phone number was in her spot. I texted the spot and explained that my daughter had lost her phone at the river and told them I would give a reward for them returning the phone. After a few minutes, I received a text back that said "Sorry wrong number" and I knew at that moment the person had found the phone put in a new SIM card, and was not going to return the phone. I didn't bother to text back.

My second daughter looked up the phone number on the Cash App and found the person's name. I looked up the person on Facebook and found a local person with that name. I didn't bother contacting them on Facebook because of the text they had sent me. I stopped by the local cellphone store and asked a store worker what I could do about my daughter's personal information on her phone. He told me to call my service provider and put in a lost/stolen report on the phone and then call Apple to help me wipe my daughter's phone clean so it would basically turn the phone into a "paperweight" and render the phone useless if they tried to use it with another service provider. That did make me feel better and I am going to do that for sure. I will keep you updated on that situation.

Then when I got home Friday night after work I didn't have Internet service at my house. It's a little personal to share but this is a personal blog after all so I will share what is going on. My wife and I have separated. (We are back together now, and saving our marriage.) It is sad but it happens in life. We have been married 32 years this October. We got married young. I hope that if she reads this post she isn't upset I shared it here. This blog is like therapy for me and it does help to write things out sometimes. There is an upside to the situation if you could say that. My wife and I are good friends in the situation and both of us are very nice to each other. Both of us agree that is the best thing to do and we do not point blame at each other. We are still figuring things out and going to file an uncontested divorce while we agree to share custody of our 16-year-old daughter. I shared that to explain my Internet service interruption. My wife rented an apartment and ordered a new Internet service account in her name for her apartment. The service provider said they could open her new account in her name but she already had an account in her name at our home. My wife was told that they would text me for verification purposes to have the home account in my name. I never received a text while I was at work so it wasn't set up. Hence, no Internet service at the house. I'm not mad at my wife. It wasn't her fault at all but I am a little discouraged at the Internet service provider and will let them know when I call Monday to set it up. I am staying positive and trying my best not to let things get to me.

After helping my wife move some things to her new apartment, I had to mow the yard. The mower started acting up and died a few times. Finally at the end of mowing, when I was close to being done, the mower died and I could not get it started again. It was getting dark so I just put it in neutral gear and pushed it to the backyard by the fire pit. What a weekend! I have been using my phone as a hot-spot to access the Internet so I am doing that while I write this post and streaming Netflix. My daughter is watching a good family movie that she really enjoys.

All in all, I am still very positive and grateful for all the blessings in my life. Can you relate to any of this? If you are going through a tough time right now, it is my nature to encourage you that things will get better. There are good times and bad times they say. Naturally, we don't like the bad times but I am of the opinion that we can make the bad times as good as possible by maintaining a good attitude and prayer.

So where in the world did the Cheeseburger Pie recipe come from? The inventor of this delicious recipe goes by the name of Derek McNabb. He is the Rosebowl Cafe head baker. The original creation had two Agus beef patties. It had pickles, onions, mustard, and two types of cheese inside it.

Can you freeze Impossible pie? The answer is YES and all you have to do is wrap it tightly in aluminum foil and place it in the freezer. Spicy Buffalo Chicken Wings Easy Recipe

 


SPICY BUFFALO CHICKEN WINGS EASY RECIPE (Main Dishes, Chicken)

Ingredients:

2 to 3 pounds chicken wings, cut off the joint
3/4 stick margarine
1/2 cup cayenne pepper
1/4 teaspoon cumin
1/2 teaspoon black pepper
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Mrs. Dash
red pepper flakes to taste

Directions:

Melt margarine: Add remaining ingredients. Dip wings in the sauce until thickly coated. Bake in a roasting pan in a 400-degree oven for 1 hour or until juices run clear. Turn once after cooking for 30 minutes. It may be served with Bleu cheese or Hidden Valley dressing. 

My Thoughts:

Every year as long as I can remember, it is a past-time for me to cook Buffalo Chicken wings. I do this for the Super Bowl Football game; it is so much fun. I don't always watch football and mostly like my state team. Don't be upset at me for that, but I guess you could say I am a low-key football fan.

My favorite part about the Super Bowl game is the halftime show and the commercials. Don't get me wrong, I enjoy watching the game. It is usually exciting to see. In the last few years, the halftime show has not been very good. Do you agree with me on this? I am sure others will agree with me.

I like to have a veggie tray with my Buffalo Chicken wings for the game too and some kind of dessert to eat like pie or cake. I'm not much of a drinker but a beer or two usually goes well at a Super Bowl party. Some people even wear their favorite team's jersey during the game. I think I would do that too if I bought a football jersey.

Time Magazine ran an article on the History of Buffalo wings and it is very interesting. Did you know the buffalo wing was invented in 1964? I didn't either until I looked it up. Do you remember when you first tried a buffalo wing? I wondered why they were called "buffalo wings" when I knew buffalo did not have wings. I'm goofy I know.

Hamburger Potato Casserole Easy Recipe

 


HAMBURGER POTATO CASSEROLE EASY RECIPE (Main Dishes, Beef)

INGREDIENTS:

4 Cups Thinly Sliced Potatoes
1/4 Cup Plus 1 Tablespoon Chopped Onion
2 Teaspoons Salt
14 Teaspoon Pepper
1 Teaspoon Parsley
1 Pound Ground Beef
3/4 Cup Evaporated Milk
1/2 Cup Fin Cracker Crumbs or Uncooked Oatmeal
1/4 Cup Catsup

Directions:

In a greased 2-quart baking dish, arrange potatoes and 1 tablespoon onion. Sprinkle with 1 teaspoon salt, 1/8 teaspoon pepper, and parsley flakes.

In a separate bowl, mix ground beef and milk. Spread over potatoes. Mix crumbs or oats, catsup, 1/4 cup chopped onion, 1 teaspoon salt, and 1/8 teaspoon pepper. Spread over hamburger. Bake for 1 hour in preheated 350-degree oven. 

My Thoughts:

You can go right with meat and potatoes. They are the best for sure. I hope that you enjoy this Hamburger Potato Casserole Easy Recipe. While growing up my mom would most always serve me potatoes. Usually some kind of meat. The meat was most always hamburger. It was a cheaper meat for the family to eat. My mom worked for Wal-Mart and we didn't have much money. With the beef, were potatoes. She would make mashed potatoes or fried potatoes. Then she would make some kind of vegetable to go with the meal. Green beans would go with most meals. Today, I really love green beans.

Living in the mid-west, beef is such a popular thing to eat. The local cities around where I live today have some sort of steak restaurant that serves steak cuts. One of my favorite steak places to visit is the Texas Roadhouse. I really enjoy their 20-ounce bone-in ribeye steak. I always order green beans with my steak. I suppose it has something to do with my meals as a child. My mom made many different meals and always did the best she could. Try adding your favorite season to this recipe. One of my favorite seasons is Tony Chachere's season. You can also try adding garlic salt to the recipe if you like garlic. I cook with minced garlic a lot. Most always when I try a new recipe I find, I add something to it to make it my own. It might be a spice or two that gives it an extra flavor.

Bierocks Easy Recipe

 


BIEROCKS EASY RECIPE (Main Dishes, Beef)

INGREDIENTS:

1 Package Active Dry Yeast
1/4 Cup Warm Water
1/4 Cup Warm Milk
2 Tablespoons Sugar
3 Tablespoons Butter
1/2 Teaspoon Salt
2 to 2 1/4 Cups All Purpose Flour
1 Beaten Egg
1 Pound Ground Beef
1 Onion
1/2 Teaspoon Galic Salt
1/2 Teaspoon Salt
1 Can Saurkraut

Directions:

Soften the yeast in a medium saucepan with warm water. Combine the milk, sugar, butter, and salt in a separate bowl. Heat and stir until the butter melts. Add about 1 cup of flour and beat well. Add the egg and beat well. Stir in the softened yeast. Stir in enough flour to make a stiff dough. Turn out and knead on a lightly floured surface. Knead until smooth and elastic for about 5 minutes. Place the dough in a greased bowl and cover it. Let the dough rise in a warm place until it doubles for 1 to 1 1/4 hours. Cook the beef, onion, salt, and then drain. Add the sauerkraut. Punch the dough down. Divide the dough. Roll out the dough and put the meat filling in it. Dampen the pastry edges then seal the edges. Bake in the oven at 375 degrees for 20 to 25 minutes. Let the bierocks cool a little while and then serve.

My Thoughts:

The first time I had Bierocks I absolutely fell in love with them. They are so delicious! I was at a family member's house when these wonderful beef pastries first touched my palette. Ok, now I sound like a professional blogger, don't I? I remember eating two or three and then the dough swelled in my belly. I was forced to stretch out on the couch and just moan with fullness. You should have seen me. I am sure that you are glad you didn't. It was such a sight.

If you don't mind hearing about my day I will be glad to share with you here. I cleaned up in the kitchen and worked on some laundry. After I finished those chores I visited my mother at her house. It was her birthday on Friday. I was unable to visit her because I went to the local farmer's market with my daughter. She had about seven different cookies for sale. Her newest item was a strawberry crinkle cookie that sold out very well. One customer, in particular, was very interesting. He was almost seven feet tall by my estimation. He sported a full beard that was speckled with gray hairs. He had bright blue eyes and spoke in the deepest voice I think I have ever heard. He was like a giant and I am 5 foot 11 inches. He softly asked my daughter if he could have two of the strawberry crinkle cookies. He slowly handed my daughter the money and took the cookies in his large hand which resembled a bunch of bananas. He gave my daughter a little smile and said "Thank you" as he walked away.

After visiting my mother at her house, my daughter wanted to go for a drive. We made a large circle on the outer paved roads here in the area. Sometimes a drive is a nice thing to do.

Bierocks were commonly consumed by European blue-collar workers as a popular staple. Over time German Russian Mennonites brought the beefy dish to the United States when they immigrated in the 1870s. Spiced Tea Easy Recipe Mix

 


SPICED TEA EASY RECIPE MIX (Appetizers & Beverages)

INGREDIENTS:

1 Cup Instant Tea
1 1/4 Cup Tang Orange Drink Mix
1 Package Lemonade Mix (Country Time or Wyler's)
1 Cup Sugar
2 Teaspoons Cinnamon
1 Teaspoon Cloves

DIRECTIONS:

Mix the ingredients all together. Store in an airtight container. Use about 2 teaspoons of mix to 1 cup of hot water.

My Thoughts:

Growing up, iced tea was always made and available to drink in my house. It was always sweet tea. Unsweet was something we didn't like in the refrigerator. The process of making sweet tea to drink was always the same. I would boil water on the stovetop and then add the tea bags. I would set it for about thirty minutes and then remove the tea bags. I poured the tea into a plastic pitcher that had the desired amount of sugar waiting. Then I would stir it up until the sugar dissolved. Finally, I would add in water until the pitcher was completely full and finish off by giving a good stir.

Did you know that tea was introduced to America by the Dutch in 1640? The only other beverage consumed more than tea worldwide is water. I would have thought it would be coffee first but, nope. China consumes most of the tea in the world right now. The United States leads the way for the world when it comes to importing tea. That lets you know that Americans consume a whole lot of tea. I also would have thought that the leading importer of tea might be Great Britain. I know they drink a bunch of tea for sure.

When I drink tea I usually buy the regular black tea you might find at the supermarket. I am not picky about getting name-brand tea. I usually just buy the store's generic tea. I am happy with that. There are tea drinkers with lots of money who drink very expensive tea. The most expensive tea in the world is called Da-Hong Pao-Tea from China. It costs a whopping $1.2 million per kilogram. Now that is some very costly tea and in my opinion, it better taste very good. I would imagine it tastes like regular tea. I am laughing out loud right now because I can't imagine spending that much on tea. The fact remains that it sells for that price.

Chocolate Crinkle Cookies Recipe

 


These cookies are the bomb!

If you are looking to fulfill that chocolate craving then you have to try the homemade recipe I’m sharing in this post.

So my daughter Zoe is such an amazing baker. A few years ago she asked if she could do some baking. As a parent, the first thought at a question like that from your teenage daughter might be, “Ok, but this is going to take a lot of time and supervision.” This was not the case with my daughter.

I showed her a few things about the oven and then she politely showed me from the kitchen. I’d go back every now and then to check up on her but she always seemed to be doing fine at the job.

Baking is a great hobby for kids. I believe as a parent it’s important to cultivate our children’s interests.

When she started baking the oven was a little out of date and didn’t work the greatest. I did a little searching online at the Facebook Marketplace but didn’t find what I was looking for. As the old saying goes, “Seek and you will find” I happen to scroll to a post that was made by a friend who had a used oven for sale. It was a good deal.

Now after a couple of years, Zoe has been enjoying a newfound hobby that really makes it difficult for me to watch my weight. I find myself watching her incredible baking creations instead.

What a great kid!

I myself am not a great baker. I love cooking on top of the cook stove. When I would cook I would show Zoe how I go about it and how I take recipes, add my own twist, and make them my own. I really cook for the flavor, and cook how I would want the food to taste. I think cooking is so much fun and there’s nothing more rewarding than cooking something for someone. When somebody eats my cooking and they say it tastes really good, it gives me a great feeling.

Zoe took what I taught her about cooking on top of the stove and applied it to her baking. She does her research of course but makes it all her own using time-tested baking techniques.

Now after some time, as I mentioned, her baking skills have most certainly impressed friends and family.

I would take baking goods that Zoe created to my work and share them. The compliments are all positive and Zoe loves to hear what my friends say about her baking.

Recently Zoe asked me if I could help her sell her baking. I know we have a local farmers market so I inquired about getting set up. I already have a table and chairs we could use but now I’m searching for a canopy to cover our setup. They can be purchased at Sam’s Discount Club but to help save money I would like to purchase a used one.

I have set a goal to make this happen for Zoe. I think it will be a great experience for her to bake and interact with the public in an enterprising way. It can also teach her a lot about business.

Do you think teaching children about business is a good way to parent?

I am hoping she will do well with this and will do everything in my means to make it happen. Hopefully, she will make enough money to purchase something as a reward for herself. She’s a bookworm so I know she will buy plenty of books to add to her library.
